Veg Biryani Recipe

Veg Biryani using Zahfroma Shahi Biryani Masala:

→ 1 cup basmati rice (soaked for 20–30 minutes)
→ 1½ cups mixed vegetables (carrot, beans, peas, potato, cauliflower – chopped)
→ 1 large onion (thinly sliced)
→ 2 tbsp Zahfroma Shahi Biryani Masala
→ 1 tsp ginger-garlic paste
→ 2 tbsp curd
→ 2 tbsp ghee or oil
→ Salt to taste
→ Whole spices (1 bay leaf, 2 cloves, 1 small cinnamon stick, 1 green cardamom)
→ Fresh mint and coriander leaves (chopped)
→ 2 cups water

To fry (optional for garnish):
→ A few onion slices
→ Cashews and raisins in ghee

Method:
→ Heat ghee in a heavy pan and fry whole spices till aromatic.
→ Add sliced onions and sauté till golden.
→ Add ginger-garlic paste and sauté till raw smell goes.
→ Add vegetables, curd, and Zahfroma Shahi Biryani Masala. Cook for 3–4 minutes.
→ Add soaked rice, salt, and water. Mix gently.
→ Add chopped mint and coriander.
→ Cover and cook on low flame for 12–15 minutes or until rice is cooked and fluffy.
→ (Optional) Garnish with fried onions, cashews, and raisins.
→ Serve hot with raita or curd.
