Idli Sambar Recipe

Idli Sambar using Zahfroma Sambar Masala:

→ ½ cup toor dal (washed and pressure cooked till soft)
→ 1 small onion (sliced or chopped)
→ 1 small tomato (chopped)
→ 1 cup mixed vegetables (carrot, drumstick, brinjal, pumpkin, etc.)
→ 1½ tbsp Zahfroma Sambar Masala
→ ½ tsp turmeric powder
→ Salt to taste
→ Tamarind pulp (1 tbsp soaked and strained)
→ Water as needed
→ Fresh coriander leaves for garnish

For tempering:
→ 1 tbsp oil or ghee
→ ½ tsp mustard seeds
→ 1 dried red chilli
→ A few curry leaves
→ A pinch of hing (asafoetida)

Method:
→ In a deep pan, add cooked dal, turmeric, salt, vegetables, and water. Boil until vegetables are soft.
→ Add tomatoes, Zahfroma Sambar Masala, and tamarind pulp. Simmer for 5–7 minutes.
→ Prepare tempering by heating oil, adding mustard seeds, red chilli, curry leaves, and hing.
→ Pour the tempering over the sambar and mix well.
→ Garnish with chopped coriander and serve hot with soft idlis.
